“prosciutto e panino uovo fritto”
A prosciutto and fried egg sandwich is a truly hearty, nutritious, quick food. My family loves simple fried egg sandwiches for breakfast. But we also have a “breakfast food for dinner” tradition on Wednesday nights. We all look forward to this night; my family loves the breakfast food at a nontraditional time of day, and I love the easy meal preparation of having breakfast food for dinner. It’s a win-win situation for our family.
Prep time: 20 minutes
- 4 english muffins, sliced and toasted (this is also delicious with prepared biscuits that are warmed and buttered)
- 4 slices of prosciutto
- 4 eggs
- 2-3 tablespoons of olive oil
- 1 tablespoon butter or margarine for buttering toast or biscuits
- Salt and pepper to taste
- Add a flavorful slice of cheese if desired (aged provolone or cheddar works well)
Preheat oven to 375 degrees.
Place english muffins on cookie sheet; put in oven to toast.
Put 2 tablespoons of olive oil in a large skillet and preheat.
Brown prosciutto in skillet until crisp. Remove and set aside on paper towel to drain.
Add remaining tablespoon of olive oil to pan.
Break each egg into the pan, each in it’s own spot, and break yolks.
Cook until top of egg is no longer transparent; turn over and finish cooking until the eggs are cooked through.
If using cheese, place slices of cheese atop eggs and turn off heat.
Remove english muffins from oven and butter.
Top each muffin with one egg and a slice of prosciutto. Cover with muffin top and enjoy!
