Oatmeal Peanut Fudge


This oatmeal peanut fudge is a never-fail recipe that you can whip up in 10 minutes using one bowl and a microwave oven. No joke!

It was shared with me nearly 25 years ago by a colleague, Yvonne, and it’s become a tradition every Christmas.

Now it’s my turn to share–thanks Yvonne. Enjoy this melt-in-your-mouth, delicious bit of chocolate heaven!

Prep time: 10 minutes
Makes one 15″x10-1/2″x1″pan (jelly roll)


  • 1 1/2 cups sugar
  • 1 cup milk
  • 1 cup butter
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 24 ounces of semi-sweet chocolate chips
  • 1/2 cup peanut butter
  • 3 cups quick cooking oats
  • 1 cup finely chopped unsalted or salted peanuts


Line pan with parchment paper so it extends over the edges; set aside.

In a large microwave-proof bowl (I use glass), combine sugar, milk, butter and salt.

Microwave on high for 5 minutes; stir.

Microwave on high for an additional 4 minutes; stir.

Add the chocolate chips and peanut butter. Stir until morsels melt and mixture is smooth.

Stir in oats, peanuts and vanilla extract; stir until well combined.

Pour into prepared pan.

Chill until set.

Once fudge is set, carefully lift the fudge block out of the pan using the edges of the parchment paper.

Cut into 2″x2″ squares (they are small because it’s very rich).

Keep chilled until ready to serve.

This recipe makes a ton so it’s ideal for sharing.
