My Italian cheese bread recipe is one of the most popular loaves I make. Often I make rolls instead of loaves, which are delicious for just about any kind of sandwich.

Bread machine recipe. My Italian cheese bread recipe is one of the most popular loaves I make. Often I make rolls instead of loaves, which are delicious for just about any kind of sandwich.

Ingredients
  • ¾ cup milk
  • 3 tablespoons water
  • 1 egg
  • 1 tablespoon butter or margarine
  • 3 cups flour
  • ¾ cup grated asiago, aged provolone, pecorino romano, OR parmigiano reggiano – save some for garnish
  • ½ teaspoon salt
  • 1 teaspoon yeast
  • Don’t add to machine, reserve for brushing: 1 egg combined with 1 tablespoon water
Preparation
  1. Add all ingredients to your bread machine in order given.
  2. Select the dough cycle.
  3. Watch the kneading process carefully and add flour if too sticky or water if too dry.
  4. When kneading is complete, remove dough from pan.
  5. Shape dough into one loaf and let raise in greased bread pan.
  6. Or, alternately, separate dough into indivdual rounds to make rolls.
  7. Place loaf in a greased bread pan (or rolls on a greased baking sheet) and cover tightly. A greased container over the top of dough works best for me vs. plastic wrap or a towel.
  8. Place on warm stovetop (300 degree oven) and let raise for one hour.
  9. When dough has doubled in size, place in 425 degree oven for 10 minutes. (Loaf 10 minutes; rolls 5 minutes).
  10. After 10 minutes, remove from oven and carefully brush with egg mixture and sprinkle with remaining cheese.
  11. Return to oven until golden brown.
  12. Cool thoroughly on wire rack before storing or freezing.
