Four simple ingredients make Basil and Garlic Chicken an easy meal to whip up. Just cook it low and slow on your cooktop, add a couple of sides and you have a delicious meal in no time.
The basil and garlic infuse into the chicken while it is cooking giving the ckicken a wonderful flavor.
Prep time: 10 minutes prep plus 20-25 minutes cook time
- 2 boneless chicken breasts
- 2 large stems of fresh basil
- 10 garlic cloves, peeled and smashed slightly to release flavor
- 4-5 tablespoons of olive oil
- Salt and pepper quanto basta (as much as needed; to taste)
Preheat skillet over medium heat.
Reduce heat to low. Put olive oil and garlic in the pan. Cook until garlic is slightly brown.
Sprinkle both sides of the chicken breasts with salt and pepper.
Split each stem of fresh garlic evenly so you have 4 pieces.
Divide the cooked garlic (in the pan) into 2 sections.
Place one sprig of basil on top of each chicken breast.
Place chicken basil side down on one section of garlic in the pan.
Repeat with the other chicken breast.

Let the chicken cook slowly on one side until you can see the edges turning white.
Put the remaining sprigs of basil on the uncooked side of chicken in pan and turn to cook the other side.
Cook until the chicken feels firm and the juices run clear; approximately 10-15 minutes. BE SURE you are cooking low and slow or the chicken will dry out.
I particularly love chicken with rosemary. This chicken recipe is equally good with rosemary in place of the basil.
