Torta di Mele

This is one of my favorite Italian cake recipes that is good just about any time of the year. It’s wonderfully moist. When you want an easy dessert or something to go with morning coffee, try this.

Ingredients
  • 1-1/2 cup all-purpose flour
  • ¾ cup brown sugar
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 egg
  • 1 cup plain yogurt (not vanilla; just plain old yogurt) or ¾ cup of olive oil
  • 1 teaspoon vanilla extract**
  • 2 apples, chopped (with or without skins; I prefer to leave mine on)
  • ½ cup walnuts (optional – substitute any nut you like)
  • **See link on page below for my homemade vanilla extract!
Preparation
  1. Preheat oven to 350 degrees Fahrenheit
  2. Grease and flour an 8×8 glass baking pan and set aside
  3. In a large bowl, combine flour, sugar, baking soda, salt, and cinnamon. Make a well in the center and set aside.
  4. In a medium bowl, combine eggs, yogurt or olive oil, and vanilla.
  5. Stir in apples and nuts.
  6. Add wet mixture to the well in the center of your dry ingredients. Stir just until moistened.
  7. Spread batter into prepared baking pan.
  8. Bake for 40-45 minutes until toothpick inserted to middle comes out clean. Bake time may vary; you know your oven best. Check after 30 minutes to determine the remaining bake time.
  9. Cool on a wire rack.
  10. To serve, top each serving with a drizzle of caramel or sweetened whipped cream. Or both!
